The Hammond B-3 organ plays the entire melody, the bass line, and the improvisational fills — it is the sole melodic voice of the track and one of the most iconic organ performances in recorded music.
Jones was just 17 years old when the session happened in June 1962; the band had been waiting in the studio for another artist who never showed up, so they started jamming spontaneously and cut "Green Onions" in a handful of takes.
